WHere is a simplified interpretation of a drink from the seasonal cocktail list. It's a party-sized premix that is loaded with the essence of the Christmas time, rendering it perfect for a celebration. Any leftover cordial for breakfast cocktails, puddings, or to mix additional servings of the drink.
Bikini Recipe
Makes enough for 10 guests
To make the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Premix (yields 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Method
To prepare the Cordial: Place every ingredients into a pan, bring to a gentle boil, stirring to dissolve. Next, remove from the heat allowing it to cool entirely. Pour into a sterilised bottle, cap it and store in the fridge, where it will keep for around four weeks.
For the Cocktail Base: Combine all the liquids into a large bottle, let it rest for an hour, then filter it preferably using muslin, making it fully clarified.
For serving: Pour 85ml of your premix to a stirring glass containing ice, gently stirring gently for one minute to cool it down. Pour into an cold coupe glass or a similar vessel, decorate with the cranberries adding the final touch by giving it a quick spritz of mandarin oil above the glass.
